Creating a new type of venue

Why

We created this multi-concept venue to blend the lines between a food hall, a drive-thru and social gathering place.

We are often asked if a food hall would work at a particular venue. The short answer is maybe. But often times there may be an offshoot version that makes more sense based on the market density and need. We are constantly looking at ways to create exciting environments that provide opportunities for up-and-coming chefs to bring the type of food experiences people want in ways that work economically. We are very different form the typical design firm in that we know how to create places that respond to current customer needs and make money. As we often say, it doesn’t matter if something looks great but doesn't work.

The Concept

We set out to create a multi-concept venue that has the vibrancy of a food hall/social gathering place with the ability to offer delivery, curbside service, drive thru and the variety and efficiency of a ghost kitchen. Our goal was to modify the idea of a food hall - keeping the vibrancy and creativity - creating a model that could operate successfully in a lower-density or suburban area. This example is being used in a more suburban area and is all about convenience and experience. Restaurants have long needed to embrace the idea and act upon all potential sales channels and have solid strategies for each. Also, with recent challenges brought on by the pandemic we need to have solutions that can be flexible no matter what happens in the future. this model is built around a large , enclose-able patio offering the best opportunity to build in person experiences as well as drive all off premise channels with equal vigor.

 

Flexibility

The idea we have created is now being adopted to a number of environments with the same, solid fundamentals.

Convenient - Be easy to do business with in all ways: In person, drive thru, curbside, walk-up.

Vibrant- The best part of a food hall is the innovative food being done by creative, operators. This model takes that idea and add the financial model and structure to provide leadership operationally that will allow the format to compete and win.

Resilient investment - This model is designed to work for developers that need an amenity to a development that cant be matched by leasing individual spaces. IT provides the vibrancy and excitement of a food hall with a model that works.
